Moosewood Split Pea Soup

- 3 cups green split peas, dried
- 7 cups water
- 1 packet George Washington golden broth
- 1 bay leaf
- 2 tsp salt
- 1 cup minced onion
- 3 cloves garlic, crushed
- 1 cup celery, minced
- 1 small potato, thinly sliced
- 2 cups carrots, sliced
- 1 can chopped tomatoes (about 1 1/2 cups)
- 1/4 cup fresh parsley, chopped
- 1/4 tsp thyme
Add all ingredients together in a large pan and bring to a boil. Lower heat and simmer until split peas are done.
