Green Curry Tofu

Servings: 4 (2 main meal size)

  • 3 tbs sesame seed oil
  • 1 pkg firm tofu, cubed
  • 1/4 tsp salt
  • 10 oz can coconut milk
  • 1 tsp green curry paste*
  • broccoli, chopped
  • garlic, diced
  • leek, chopped
  • summer squash, chopped
  • red or yellow pepper

Using medium heat fry tofu in sesame seed oil until browned. Add vegetables to the stir fry.

Boil cocunt milk and add appropriate amount of green curry paste (for the Fest I also added 1 tsp chicken seasoning, 1/4 cup basil, and a touch of coriander). Pour over stir fry.

Serve over Jasmine Rice.

Original recipe called for 2 tbs. However, I tried with 1 tbs and it was waaay too spicy. Unfortunately, when you reduce the spicyness, the coconut milk ends up a bit bland so it's necessary to add other spices.
