Vicki's Spanish Rice

  • 1 tsp olive oil
  • 1 1/4 cups white rice (jasmine)
  • 1/2 onion
  • 1 cup hot water
  • 1 1/2 cups tomato juice
  • 1 tsp salt
  • 1/2 tsp cumin

Saute rice and onion.


Add water, tomato juice, salt and cumin. Cover and simmer for 25 minutes.
