Texas Fruit Cake

  • 2 cups dates, pitted
  • 3 cups pecans
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup crystallized cherries
  • 3 tsp baking powder
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt

Sift all dry ingredients and pour over nuts and dates.


Add vanilla to well beaten eggs and pour over the mixture. Stir until thoroughly mixed.

Bake in well greased tins lined with wax paper for 1 hr. (or more in slow oven) 325 degrees.

Enough for 2 loaf pans.

Turn upside down on wire rack and remove papers.

Serve with whipped cream.
