Soba Noodles with Broccoli and Seitan

Adapted from Soba Noodles with Broccoli Sauce by Judith Finlayson

Ingredients:

  • 8 oz soba noodles
  • 3 tbs sesame oil, divided
  • 8 oz seitan, cubed
  • 3 tbs soy sauce
  • 1 tbs mirin
  • 1 cup stock
  • 1/2 tsp brown sugar
  • black pepper
  • 3 cloves garlic, minced
  • 2 tbs ginger, minced
  • 2 head broccoli, chopped
  • 2 green onions, thinly sliced

Boil water and add the soba noodles for 5 minutes. Drain the soba noodles and then stir in some of the sesame oil

Mix together the soy sauce, mirin, stock, and brown sugar.

Heat the rest of the sesame oil in a pan and saute the seitan until it starts to brown. Add the garlic and the ginger and saute for a minute. Add the broccoli and stir to cover well in the oil. Add the stock, cover, and cook till the broccoli is barely tender. Season to taste.

Serve the broccoli on top of the noodles and garnish with the green onions.
