Rhubarb Coffee Cake

  • 1/2 cup margarine
  • 1 cup sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 1 tsp soda
  • pinch of salt
  • 2 cups rhubarb, diced

Topping:

  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup chopped walnuts


Mix liquid ingredients together. Mix dry ingredients, excluding rhubarb, together and then combine with liquid ingredients. Fold in 2 cups diced rhubarb. Spread in a greased 9x13 pan. Top with brown sugar, cinnamon, and chopped walnuts. Bake at 350 degrees for 35-45 minutes.
