Morning Glory Muffins

Adapted from King Arthur Flour Whole Grain Baking p. 35

  • 1/2 cup raisins
  • 2 cups whole wheat flour
  • 1/4 cup brown sugar
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 2 cups carrots, peeled and grated
  • 1 large apple, peeled and grated
  • 1/2 cup walnuts, chopped
  • 1/3 cup wheat germ (or sunflower seeds)
  • 6 large egg whites
  • 1/3 cup sweetened applesauce
  • 1/3 cup canola oil
  • 1/4 cup orange juice
  • 2 tsp vanilla extract

Preheat oven to 375 degrees. Grease muffin tins.

Pour boiling water over the raisins and set aside.

Mixed dry ingredients together. Stir in carrots, apple, walnuts, and wheat germ. Mix liquid ingredients together. Add to the flour mixture and stir till moistened. Fold in the raisins. Scoop batter into muffin tins and bake at 375 for 25-28 minutes.
