Greek Potatoes
From Gem's Vegetarian Cooking
Adapted From Moosewood
- 6 medium potatoes, cubed
- 1/3 cup lemon juice
- 1/3 cup vegetable oil
- 1 tbs olive oil
- 2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 tsp dried oregano
- 2 cloves garlic, minced or pressed
- water
Combine all ingredients (except water) in skillet. Cook until potatoes are done (possibly an hour) adding water as needed.
