Gem's Buttermilk Waffles

This is adapted from Mommy Logan's Buttermilk Waffles recipe to make an unhealthier version :)

  • 3 egg, seperated
  • 1/2 cup melted butter
  • 2 cups buttermilk or 1/2 cup greek yogurt + 1 1/2 cups milk mixed together
  • 2 tsp sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups white whole wheat flour
  • 1/2 cup toasted pecans, finely chopped

Mix together egg yolks, melted butter, and buttermilk. Add sugar, salt, baking powder, baking soda, and flour. In a separate bowl, whip egg whites into stiff peaks and then fold into waffle batter. Stir in toasted pecans and then bake in a hot waffle iron.

Serving suggestions: slather with peanut butter and fruit topped with real whipped cream.
