Fresh Apple Muffins

  • 3/4 cup milk
  • 1 egg, beaten
  • 1/4 cup shortening, melted
  • 2 cups whole wheat flour
  • 1/2 cup sugar
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup apples, finely chopped
  • 1/4 cup raisins

Mix dry and liquid ingredients separately, then mix together. Do not over mix, should be lumpy.

Use muffin cups or grease well. Fill 2/3 full. Bake at 400 degrees for 20-25 minutes or until golden brown.
