Fiesta Fruit Cake

  • 1 1/2 cups nuts
  • 1 1/2 cups walnuts, halved
  • 1 cup dates, pitted
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1 tsp vanilla

Place nuts and dates in large bowl.

Sift flour, sugar, baking powder, and salt over fruit and nuts. Mix well.

Add eggs and vanilla to the mixture.

Bake in angel food cake pan or 9" round cake pan or 1 lb. coffee can for two hours at 300 degrees (or until firm on top).

Cool 10 minutes.


Loosen and turn out on wire rack.

Cool completely.
