Source: Mommy Logan (from Christophe) Makes about 20

  • 6 eggs, separated
  • 1/2 tsp salt
  • 2 1/2 cup flour (these can be made with White Whole Wheat Flour
  • 3 cups milk

Combine yolks and salt, alternately. Add flour and milk beating with whip until smooth. Add egg whites.

Filling ideas: Potatoes O'Brien with rosemary, salt, pepper, and cheese. Ratatouille with swiss cheese

Slightly sweetened blueberries & mandarin oranges topped with powdered sugar

Note to self: On my old glass-top stove, I use the front right burner, set to level 6 on smaller burner setting.

On induction stove I use big burner, level 5.5 with cast iron griddle. 1 1/2 min on first side, 30 seconds on other side.
