Christmas Pecan Loaf

  • 1 cup corn flake crumbs or bread crumbs
  • 2 cups pecans, chopped
  • 2/3 cup brown rice, cooked
  • 1 medium onion, minced and sauteed
  • 1 1/2 cup milk
  • 3 eggs, beaten
  • 1/4 tsp sage
  • 3 tbs oil
  • 2 tbs parsley, chopped
  • 2 tbs soy sauce
  • 1/2 tsp salt
  • 1/4 tsp thyme
  • 1/4 tsp sweet basil

Combine all ingredients mixing well. Pour into a well greased 2 qt glass casserole. Bake for 1 hour in 350 degree oven. Serve with a mushroom sauce or other favorite gravy and cranberry.
