Chocolate Zucchini Cake
Adapted from Hershey's Chocolate Treasure
- 5 egg whites
- 1 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup canola oil
- 1 cup white whole wheat flour
- 1 cup cake flour
- 1/2 cup cocoa
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup plain lowfat yogurt
- 1/4 cup nonfat milk
- 2 cups zucchini, shredded
- 1 cup cherries, dried (optional)
- 1 1/2 cup whipping cream
- 1/4 cup cocoa
- 1/3 cup chocolate syrup*
- 1/2 tsp vanilla extract
Preheat oven to 350 degrees.
Beet eggs until foamy and gradually add sugar, vanilla, and oil. Combine flours, cocoa, baking powder, baking soda, cinnamon and salt. In a small bowl, mix together milk and yogurt**. Alternately add the flour and yogurt mixture to the eggs. Fold in zucchini and cherries.
Pour into 2 greased/floured 9" cake pans. Bake at 350 for about 30 minutes until cake springs back when touched. Cool for 10 minutes in pan and then cool completely on wire rack.
Chill mixing bowl and egg beaters in refrigerator until very cool. In chilled mixing bowl, combine whipping cream, chocolate syrup, cocoa, and vanilla. Beat to spreading consistency.
Spreading frosting on first cake, place 2nd cake on top and finish frosting. Refrigerate until ready to serve.
* "Organic" chocolate syrup is available without corn syrup as one of the ingredients. ** You can also substitute 3/4 cup buttermilk for the milk/yogurt mixture.

Note: The frosting accounts for around 80 calories per serving. You could probably greatly reduce this by using Chocolate Cool Whip instead. Personally, I am willing to have a higher calorie content in order to avoid the extra ingredients in Cool Whip.
