Amaranth Cornbread Muffins

Modified from Amaranth Studded Cornbread recipe from The Voluptuous Vegan (p.102).

  • 1/4 cup Amaranth
  • 1 1/2 cups cornmeal
  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3 tbs canola oil
  • 1/4 cup maple syrup
  • 1/2 tsp salt
  • 1 cup applesauce
  • 1 cup soy milk

Preheat oven to 350 degrees. Mix dry ingredients together. Mix wet ingredients together and then add to dry ingredients mixing just until ingredients are combined. Pour mixture into 12 muffin pans and bake at 350 for around 20 minutes or until done.
