Pregnancy Pudding (Vegan Chocolate Pudding)

Okay, the name is a bit of an exaggeration but consider the massive quanities of protein, iron and zinc in this dessert it seemed as good a name as any :)

  • 12.5 oz (1 carton) Silken Extra Firm Tofu (I like the boxed Mori-Nu brand)*
  • 5 tbs Sugar**
  • 5 tbs Unsweetened Cocoa Powder
  • 1/4 tsp Pure Vanilla Extract


Put all ingredients in a food processor and puree until very smooth.

* You can use the light variety instead but it doesn't reduce the calories significantly per serving and does reduce the protein, iron and zinc. Plus, I like how the full-fat variety tastes.

** You can substitute honey instead of sugar but the flavor will be a little different and it will add slightly more calories to the overall recipe.
