About Gem's Vegetarian Cooking

This collection of vegetarian recipes started from my mother's and mother-in-law's recipe collection. As time has passed, I've added new recipes that I have enjoyed. While I started this project for my own benefit, this wiki is free for anyone to change/add recipes to as long as the recipes are vegetarian (click here for information about vegetarianism). Because of spam problems, you must have a user account to edit or add recipes. To request a user account, email me at gemstonelogan@gmail.com.

An asterisk (*) after an entry's title indicates that it's a copyrighted recipe from another source. I do not include the actual recipe for these titles. Instead, I'll link to WorldCat which will show the closest library with the specified cookbook and/or magazine. Also, I'll include any comments I have about the recipe and nutritional information for it.

Featured Recipe: French Toast Sandwiches

Adapted from King Arthur Whole Grain Baking

  • 8 slices Whole Wheat or Multi-Grain Bread*
  • 6 tbs Nutella**
  • 2 medium Bananas
  • 2 Eggs
  • 1/2 cup Nonfat Milk
  • 1/4 tsp Vanilla Extract
  • 1/4 cup Maple Syrup***

* For nutritional analysis, I used my Cinnamon Raisin Bread which is really good in this recipe.

**You could also use peanut butter but I think Nutella is better in this recipe.

***Optional but included in the nutritional information.


Heat a non-stick frying pan or griddle to medium heat.


Spread a thin layer of Nutella on each slice of bread. Thinly slice the bananas. Place the banana on top of the Nutella on four of the slices of bread. Cover with remaining four bread slices to make a sandwich.


Beat together egg, milk, and vanilla and pour into a shallow container such as a pie plate. Take one sandwich and dip one side into the egg mixture for 5 seconds. Turn the sandwich over and let sit for another 5 seconds. Transfer the sandwich to the skillet and fry for around 2 1/2 minutes. Turn sandwich over and fry for another 2 1/2 minutes or until done. Repeat with remaining 3 sandwiches.


If desired, top sandwiches with real maple syrup and serve.
