Palak Paneer

  • 1 recipe of Paneer
  • Peanut Oil
  • 1 tbs fresh ginger
  • 1 tsp whole cumin seeds
  • 3 sm cloves of garlic
  • 1/2 cup onion
  • 1 1/2 lbs Spinach
  • 6 tbs non-fat sour cream
  • One can drained and rinsed tomatoes
  • salt and pepper to taste

Broil or saute the Paneer in peanut sauce until golden.

Saute in a little bit of oil garlic, onion, ginger and cumin seeds for several minutes. Add a little bit of water and the spinach. Cook until spinach is wilted. Add tomatoes and sour cream and cook a minute or two longer. Put spinach in food processor and puree until smooth. Pour mixture back into pan and add paneer, salt and pepper. Serve over rice.

Serves 4.
