  • 3 cloves garlic
  • 10 oz can Curry Braised Gluten Tidbits (Cha'i-Pow-Yu)
  • 1 1/2 cups cauliflower, cut into small pieces
  • 1 1/2 cups sliced carrots
  • 1/2 tsp curry powder
  • 2 med diced unpeeled red potatoes
  • 1 can Thai Kitchen coconut milk
  • 1 cup frozen peas
  • salt to taste

Crush the garlic and sautee. Drain and add the Cha'i-Pow-Yu. Add cauliflower, carrots, curry pwoder, and potatoes and cook until tender. Add coconut milk and frozen peas and cook 5 more minutes. Add salt. Serve over rice.

Variation: Morningstar Chik'N Strips Meal Starters are a reasonable substitute for the Cha'i-Pow-Yu. However, you'll need to increase the amount of curry powder added to at least 1 tbs.
