Cornbread

  • 2 1/2 cups cornmeal
  • 1 1/2 cups whole wheat flour
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbs sugar
  • 2 eggs
  • 2 cups milk
  • 1/2 cup oil

Place baking dish in oven while it is preheating to 425 degrees.


Combine wet and dry ingredients separately and then together with a few rapid strokes.

Spread a little butter in hot pan, add batter. Bake at 425 degrees for 25 minutes.

Smaller Buttermilk Variation

Gem's variation

  • 1 cup cornmeal
  • 1 cup white whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 egg
  • 1 1/4 cup buttermilk
  • 1/4 cup oil

Combine wet ingredients. Add dry ingredients all at once and put in an 8 X 8 pan.
