Coconut Scones

  • 3 cups all-purpose flour
  • 1 1/2 cup unsweetened coconut flakes
  • 1/3 cup sugar
  • 1 tbs baking powder
  • 3/4 tsp salt
  • 1/2 cup butter or margarine, room temperature or slightly softened
  • 1 tsp vanilla
  • 3/4 cup coconut milk (I used full-fat, not lite)

Topping (optional)

  • extra coconut milk
  • sugar
  • unsweetened or sweetened shredded coconut

Preheat oven to 400 degrees.

Mix the flour, coconut flakes, sugar, baking powder, and salt together. Mix in the butter and then the vanilla. Add the coconut milk till dough starts sticking together.

Pour the dough onto the counter and form into a flat circular shape. Cut into 12 pieces and then put on greased baking sheet. If desired, brush with extra coconut milk and dust with sugar and coconut.

Bake at 400 degrees for 15-18 minutes until top is golden.
