Rhubarb Cake

  • 1/4 cup butter
  • 1 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup lowfat buttermilk
  • 2 cups flour
  • 1 tsp soda
  • 1/2 tsp salt
  • 2 cup rhubarb (floured), chopped

Cream butter and sugar. Add egg and vanilla and milk. Sift together flour, soda, and salt.

Combine milk and flour mixture.

Place in greased and floured 9 X 13 pan.

Bake at 350 degrees for 35-40 minutes.

Note: The Logan's often serve this as a brunch coffee cake.
