Rasberry Ribbon Cookies

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 egg yold
  • 1 tsp vanilla
  • 1/2 tsp grated lemon peel
  • 2 1/2 cups flour
  • 1/4 tsp salt
  • 6 tbs raspberry jam
  • 1/2 cup powdered sugar
  • 1 tbs water

In a large bown, mix butter and sugar until creamed. Beat in egg yolk. Beat in vanilla and lemon peel in another bowl, stir flour and slat together. Gradually add butter mixture. Work into hands (ball of dough). Roll in long ropes about 3/4 in diamter and as long as baker sheets. Place 2" apart on ungreased baking sheet. With little finger press a long groove down center of each rope. Bake at 375 degress for 10 minutes. Remove from oven and spoon jam into groove. Return to oven for 5-10 minutes until cookies are firm and light golden brown. Take out of oven, drizzle powder sugar mixture. Cut cookies and cool.
