Potato Refrigerator Rolls

Makes about 24 rolls

  • 1 1/2 cups Water, warm
  • 2 Teaspoon Salt
  • 2 Eggs
  • 2/3 cup oil
  • 2/3 cup Sugar
  • 1 Package yeast (1 pkg equals about 1 tbs)
  • 1 cup potatoes, warm and mashed
  • 7 1/2 Cup flour
  • melted butter

Mix together everything except the melted butter until satiny smooth. Put into greased bowl, cover with plastic wrap and leave in refrigerator over night.

When ready to make rolls: Grease two muffin tins and preheat oven to 350 degrees. Pinch off 2 walnut size balls of dough. Take one ball and dip one side in the melted butter. Smoosh the dough with the melted butter against the second dough ball and place in the muffin tin (putting butter between the two pieces of dough makes them easier to separate after baking. Let raise until double (45 minutes to an hour). Bake in a 350 oven for about fifteen to twenty minutes.

May keep in Refrigerator for several days.
