Moosewood Split Pea Soup

  • 3 cups green split peas, dried
  • 7 cups water
  • 1 packet George Washington golden broth
  • 1 bay leaf
  • 2 tsp salt
  • 1 cup minced onion
  • 3 cloves garlic, crushed
  • 1 cup celery, minced
  • 1 small potato, thinly sliced
  • 2 cups carrots, sliced
  • 1 can chopped tomatoes (about 1 1/2 cups)
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp thyme

Add all ingredients together in a large pan and bring to a boil. Lower heat and simmer until split peas are done.
