Corn and Oat Muffins

Adapted from King Arthur Flour Whole Grain Baking

  • 1/2 cup old-fashioned rolled oats
  • 3/4 cup boiling water
  • 1 cup raisins
  • 4 tbs unsalted butter, melted
  • 1/4 cup brown sugar
  • 1 cup whole yellow cornmeal¹
  • 1 cup all purpose flour
  • 1/2 cup oat flour²
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup + 2 tbs nonfat milk
  • 1/4 cup + 2 tbs nonfat plain yogurt
  • 2 lg eggs, beaten

Preheat oven to 375 degrees. Pour boiling water over old-fashioned oats. Mix in raisins, butter and sugar and let the mixture cool.

Mix together the remaining dry ingredients. Add the milk, yogurt and eggs to the oat & raisin mixture. Add the wet mixture to the dry mixture and stir until just combined.

Using a generous 1/4 cup, ladle the batter into 12 muffin tins. Bake at 375 degrees for around 25 minutes. Take out of oven and allow muffins to cool for 5 minutes before serving.


Variations

  • The original recipe calls for 3/4 cup buttermilk. However, I like the milk/yogurt mixture better and it's lower in fat.
  • If desired, instead of 2 lg eggs, you could substitute 4 lg egg whites but from a purely calorie standpoint, the substitution would be fairly insignificant.
  • You could probably use 4 tbs Canola or some other vegetable oil instead of the melted butter. However, the flavor won't be as rich.
  • If you decide to use melted margarine instead of butter, reduce the added salt a little bit. The same is true if you decide to use regular butter instead of unsalted.


¹ I really like the cornmeal from Hodgson Mill. It has a really good flavor and texture.

² You can make oat flour by taking 1 5/8 oz of quick oats and blending them in the food processor for about 30 seconds
