Carrot Cake

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 Teaspoon Baking powder
  • 1 Teaspoon Soda
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon salt
  • 2/3 cup oil
  • 2 eggs, or 4 egg whites
  • 1 cup carrots
  • 1/2 cup Pineapple, crushed -- optional
  • 1 Teaspoon Vanilla
  • 1/2 Cup nuts, optional
  • 1/2 Cup raisins, optional

Mix together. Bake at 350 degrees
