Caramels

  • 1 cup butter, not margarine
  • 2 1/4 cup Brown Sugar, Packed
  • 1 cup white Karo Syrup
  • dash salt
  • 1 can Eagle Brand Milk
  • 2 Teaspoon Vanilla
  • 1 Cup black walnuts, chopped optional

Melt butter, add brown Sugar, dissolve, add syrup, get mixture hot.Slowly add Eagle Brand Milk. Bring to a boil, and stir constantly for 12 to 15 minutes to 235 degrees or firm ball stage. Add vanilla. Pour into 9 by 9buttered dish. Cut into squares.

*Note: 235 degrees is the desired temperature near sea level. If you live at high altitude you will need to reduce this number. If you live around 5,000 feet above sea level, you will drop the tempterature by about 10 degrees to 225. Or better yet, just use the Cold Water Test.
