Artichoke and Cheese Sandwich

  • 1 loaf of French Bread
  • 1 tbs extra virgin olive oil
  • 1 medium red onion, chopped
  • 13 oz marinated artichoke hearts
  • 1 medium red bell pepper
  • 1/2 cup sharp cheddar cheese, grated
  • salt, to taste

Preheat oven to 350 degrees.

Saute the red onions in oil until tender. Add the red bell peppers for a couple of minutes. Cut the bread lengthwise in half. Sprinkle the cheese on top of the bread, dividing evenly between the two pieces. Add the onion/pepper mixture on top of the cheese. Top with artichoke hearts and sprinkle with salt.

Bake in oven until vegetables just starting to brown.
